Have you ever heard Stanley Jordan's version of Stairway?
It's different, and to me you can't really compare this with Zep at their Best. But I think each has something to add to how it is interpreted. SJ certainly is a unique performer!
The top guitar solo for me goes to: "Maggot Brain" by Funkadelic. The studio version from the album of the same name was very good. Heard it live in 1983 @ the Saenger Theather in New Orleans (first concert ever) and they blew me away again. It is the true definition of the phrase "slow jam" because it went on for 20 minutes, no joke. The rest of the best for my list is:

His song though is Eleanor Rigby, he does an absolutely AMAZING version of it.
Man, I love this guitar duel. Even though Vai wrote and performed the whole thing himself, Macchio does an incredible job of making it look like he's playing.
