haha, a good friend of mine is a chef in a 4 star place near here. he has taught me more than a few things, but most I do I make up on the fly.

For instance, the lamb im thinking of doing over a bed of spinach (with feta) and using a balsamic vinegrette drizzled over it. lamb seared (medium inside) with some seasonings and Parmesan (which will be very nice when seared methinks). Throw a couple of sliced cherry tomatoes around it for garnish.

Cherry tomatoes always add nice color and flavor to any dish.
