To logout of the FaceBook application simply swipe downward from the top bezel and on the far left there is a Logout/Logoff button to press.
You shouldn't have to log off of Facebook, just close the app......it doesn't stay running in the background when it's closed. Same goes for any Twitter client you may be using, just swipe to close.
If the FaceBook application for the BlackBerry PlayBook is akin to the smartphone version then FaceBook will keep updating the notifications unless you sign-out of the application. I have not tried leaving FaceBook open on my tablet though to verify.
The Facebook app on the BB phone supports push notifications which is why you will receive updates even when it's "closed". The Playbook Facebook does not support Push Notifications therefore when it is closed it is not making any data requests and will not use up battery life.
