You generrally would access your account via here, I think I found the right one for your carrier BlackBerry Internet Service
If you do not know your username and/or password you have either not signed up yet, and by the sounds of it you have... then You'll have to call sprint on this. Then you can access your email account via the link above or from email set-up on your phone.
On that site you can, change your signature... add filters... etc.

Did you buy the phone used? If so you probably need to call sprint customer support and have them delete the acct that's on there now. HTH
