Is the general rule of thumb that once you get a working android app to not update it?

I have switched off auto updates but have a stack of updatable apps, always good to get the latest version if they will work.

Is it just a case if trial and error and keeping the old working apk handy just in case?

I don't update Android apps such as Facebook and Messenger because they only work up for a certain version. When updating Skype, I hit the update button, but don't install until I've patched the app for Google Services. Apart from these apps, I've never had any issues updating my Android apps when updates come along. It is however a good practice to keep a copy of at least your last working apk, just in case.
