Curious. Some of the pictures I have on my phone I try to make to a wallpaper (i.e. home screen image).

Is there another way to do this, cause it seems that the phone automatically zooms in on the picture wherever it wants and you cannot change or customize the sizing or centering of a picture to show the part you want, or all of it in a smaller format.

Any help would be greatly appreciated!

If I understand your question correctly..

Try opening a picture (just in the picture viewer) and touch the screen anywhere on the picture to zoom (don't push, just touch)

and then drag across the picture to focus the area and centre it where you want... and then when you have that right -> hit the BlackBerry button (the dots) and go to set as home screen image.

That should let you do what you want.. if I'm not misunderstanding your request.
