I was looking around at themes and I noticed that I didn't really see any custom themes that were like the Dimension screen on the screen.. so my question is are there any themes available that has both icons and the calendar, messages, etc in the middle of the screen? (with being able to pick what options you want)

You can take a look at the crossbar theme. Its on bplay.com. Its not free though

That's a nice theme but it's not really what I was referring to.

I wanted it to have the default icons, but I suppose that would be obsolete if it's actually a nice icon set.

I also wanted it be like the following:

(icons)
Messages
..
..
Calendar
..
..
Call Log
..
..
(icons)

One set of icons is fine, and both are too. Even on the side(s) would be fine.

I really like the default theme included and I take it that there isn't any extension on it made by Blackberry by your response. :-/

I use classy corners and he makes custom themes that I think include what you are looking for. Search the theme area here for Classy Corners and look at the pictures. He has one with "Today" and icons.
