Many have told me that you can change phone anytime you want (with a GPS carrier like AT&T or Rogers) by taking the SIM card and putting it in the new phone. True or False?
You can, but it depends on if the phone is from another carrier and if it's locked or not. If you take for instance an AT&T SIM and put it in a T-Mo phone, it won't work unless the T-Mo phone has been unlocked to work with another carrier's SIM. But if you take that same AT&T SIM and put it in another AT&T phone it will work regardless.

Ah-ha! Gotcha. So if I happen to get a somwhat new BB from the guy down the street that is an AT&T phone, I can put my AT&T SIM card in and use it on my number. Sweet. Now, do I have to notify AT&T of this (except for adding unlimited data if it's not on that phone)?

You don't have to notify AT&T, but it is best that you update the information on the BIS website so you can continue to receive your Blackberry emails as well. You can then use "Switch Device Wizard" in the Desktop Manager to transfer all your contacts, messages, bbm buddylist and more.
second to the above statement, have donw this many times when i was on gprs networks...i have about 6 gprs berries that i used to switch back and for between depending on what i was doing and i just unlocked them all and switched the sims

One more question. Say you have a cdma berry and for convenience want an AT&T phone to have the same information on it to BIS. Is this possible? I'd like to have both with email (same email) etc.

You will not be able to retain the same @blackberry.net email address, but you will be able to set up the 3rd party emails you have set up. You would need to set them up on their respective carrier BIS sites.
