Whenever someone sends an email from a Blackberry it seems like the provider attaches a signature like "Sent from <Provider> Mobility Blackberry". Can this changed or removed?

Yes but only from PC, not BlackBerry. Log in to your provider's BIS website and change it there. If you don't have an account you'll first need to create a username and password. I'm on wap so I don't see your provider, but if you need your provider's BIS website post back and someone will provide it.
