My question is, is there any way to change a setting to get the screen to light up when you receive a text message or an email? When I'm at work I always have my phone sitting next to the keyboard with the volume off and no vibrating (makes a terrible noise against the hard surface of my desk) and I wasn't sure if there was a way to make it light up or something so I know that I have received something without having to hear a notification? Any ideas?

No way that I know of, but the LED flashes. (or can)

But when I use the "off" profile the LED doesn't blink? Is there any reason? Do I have to make a new profile with everything except the LED indicators off?

That's because the off profiles turns off ALL notifications. You should use the quiet profile. This will only alert you with the LED for notifications.
