If I unlocked a blackberry would I have issues connecting to the data from another provider? I have heard this may be a problem....if it is would it still be an issue if the phone was factory unlocked?

Any info anyone has would be appreciated

Nope!
I've had an unlocked Bold and an unlocked 8900 both from AT&T work just fine on T-Mobile. The only thing that I haven't gotten to work yet is youtube, but I've been told its just a matter of finding what I have set wrong. :P

So it connected from network to network within america, correct? What about country to country..?

So taking the phone from Canada going to England , Im wondering if i'll have problems with any compatibility issues etc.

No problem. That's one of the reasons why people need to unlock the phone. They had to travel in other countries and need to insert different sim cards, so the phone need to be unlocked first.
