So I finally got a BlackBerry after living in Korea for 4 months, but even though the 9700 is OS 6 ready, it tells me that there is no update available. My phone currently runs OS 5.

You can download any available 9700 OS 6 version and install it from a PC. The latest OS versions are stickied at the top of most device forums. If you're waiting for an 'official' release for a particular carrier, those can be delayed for many reasons. Better to take matters into your own hands.
