I just bought a Plantronics bluetooth headset. I attempted to follow the Plantronics directions to sync it with my 7100 series blackberry, but I could only find three choices for a device on the blackberry menu. How do I sync the headset?

Well, not that it matters in this case, but you aren't "syncing" the BT headset, you are "pairing" it. See, I told you terminology really doesn't matter.
Normally, you put the headset in 'pairing mode" by following the instructions for the headset. Usually it is something akin to hold down the power button about 6-10 seconds.
When it is in paring mode, on your BB, go to Options > Bluetooth Options > Menu > Add Device. The BB will then search for the headset, and hopefully find it.
If it asks for a password or such, look in your headset instructions, for the code, normally about 4 digits. If no passcode is known, always try the failsafe "0000" (four zeros, if not working, try five.
