I have an 8100 Pearl and I was wondering if it was possible to increase the number of password attempts past 10. I don't want my data to be deleted, even if my phone is stolen. Any ideas how this could be done?

No, 10 is the max! Albeit I have mine set to 3...
You either know the password, or you don't - ;)
