Just upgraded my Bold 9000 to OS 5 and is unable to locate where to set sound settings for SMS & email. The sound setting option in OS 5 only shows ring tone.
Can anyone advise?

I don't know if it's the same as the Tour. Go to Profiles (speaker icon) and scroll down to EDIT. You can tweak almost every sound for all alerts.
