I was wondering if there was a way to change the Default Browser that opens when you click on a link in your e-mail on your BB or when you click one of the "CB" icons on your BB screens desktop.
Right now when I click one of the CB icons, the Browser that came with the phone opens. Can this be changed so that say Opera Mini opens instead?

No. Your choices are limited to Internet Browser or MediaNet. There
is no way whatsoever to make Opera Mini the default browser.
