I have the Pearl... and when I am in Messenger, I hit add a contact, and I go to the Use Once, it goes right into an e-mail, I don't have the option for a PIN, can and how can I change it to PIN?

Add the PIN number to the contacts name in your address book. Then when
you try to add a contact it should prompt you for by e-mail or PIN. I think it
will take you to your address book to find the person from there.

when you go to use once, hit menu and you should be able to select email or PIN

I never noticed the "Use Once" option when I had the Pearl. When I clicked on "Add Contact" it allowed me to just enter a PIN or email for the person.
