Any help on this issue is appreciated --

I sync my work Blackberry Pearl (operating on a BES) to my home MacMini for limited purposes using Missing Sync.

Occasionally (1 in 10 times), my MacMini freezes upon plug-in. When this happens, the screen goes gray and a message tells me to hold the power button until the machine restarts. This will happen the instant that I plug in the cord to the Blackberry.

Any thoughts on what could cause this?

Not sure with the 8100's but there is a known issue with the 8130's of doing this. Try turning Mass Storage off or at the prompt when you connect say no.
