When selecting the 3 languages you can have for the keyboard. English (US) is already selected. It won't let me un check English (US) in favour of English (UK) .
I can have both but that seems redundant I would like to have English (UK) French and Spanish but it wont let me remove English (us) .
Am I missing something

This is because you selected US English when activating phone. Apparently language chosen during activation could by removed. I didn't found any other method than restore factory and go through activation again, this time with language I need.

Yes, I had the same problem. It was activated by the tech, other wise I would have selected UK English. I type in Spanish and French, so those were my other two choices.

You probably have English US set as default. You can't uncheck the default language.
Go one screen back, tap English UK, and at the bottom of the screen you can select "Make default" (it is in tiny characters...)
You will then be able to uncheck English US.
The "Make Default" button seems to do nothing. Might have to try a reset

You need to change it on this screen. Once you have done that, you can remove US English under Input Languages.
