    As noted - Remember is good, then you can file your notes in folders as you see fit, open an existing note and add more, etc.

    also - for more in depth note taking Docs To Go: Create Doc, and it's off to the races. you can change font, bold/italicize/underline, bullet lists, outline format, redo/undo. Pretty impressive, for me anyway . . .

    I've not read all the replies. But, why not simply use the built-in Evernote? At least everything will be synced and available on all devices, etc.
