Just realized that I don't know how to zoom in on my z10 camera? Can someone please help.

Place two fingers on the screen and pull them apart to zoom in and two fingers on the screen sliding towards each other to zoom out.

Pinch the screen to zoom out and flick two fingers in opposite directions to zoom in. While holding the phone sideways, I usually prefer using both thumbs to get this job done.

You can NOT pinch and zoom in Time Shift mode. Maybe that's your problem?
