So my Sprint Tour has an option under "SMS Text" called "service center:".

I am assuming I don't need to put anything in here, however it won't let me save changes to other options without entering one.

Should I enter something random, or will it screw it up? Or is there an actual item I can enter?

For the most part you can enter your own number or any number for that fact! And it will save

I don't know if that affects phones on a CDMA network, but on a GSM network, the SMS messages are routed through the service center. Whenever I had issues with my Cingular/AT&T phone, tech support would have me change the service center number to a different service center. Perhaps on our phone, it's only used when we're using the GSM half of our phone?

I've been wondering this as well. Has anyone tried going to that option without the SIM card installed to see if the option remains?
