You see, I used to press the top left button upon my Tour to lock the phone, in which it went into a Lockscreen, and showed the lil' lock icon and all that jazz.

But once I upgraded to 5.0 for Verizon, pressing that button simply dims the screen, while the other sets the phone to start playing music.

Anyway to get the lockscreen back?

    Yep, two ways:

    1.) Downgrade the OS
    2.) Enable Password Protection

You can however just hold down the a key and it will lock the phone from what I have heard. There are many posts about this already, both pro and con, so feel free to do a little searching and you should be able to get lots more details and feedback.

Thanks. This works with alt + enter on my Tour (Verizon). I liked it better when you could just hit the lock key (upper left) but I like the 5.0 upgrade enough that I'm not complaining.

RIM took this feature away in 5.0. There was a blog about it here at CB a couple of months ago with a poll asking if people still used the Mute button to lock their phones.
