I think someone would have to create a "launcher" that allows you to click on a spreadsheet-link or document-link or similar to actually open the file with the appropriate app.
You might come close using something like Shortcutme, a pay-for, 3d party app. You can assign specific apps to certain files. Quicklaunch might also be able to do it.
Unfortunately, it is not like dragging a shortcut link to your pricing-sheet to your desktop in Windows.
