I just picked up a Tour last night and started poking around for some themes today. I found a couple that I liked; both being hidden today themes. Nothing shows up under messages or calendar. I have pretty much zero experience with today themes because I always used zen themes with my Curve, so there's a good chance I'm just clueless.
The calendar is very picky. If you events synced with one of your email addresses, it might show up. If not try enter an event using device default. Today themes are very picky about that.
Can't help you with the messages as I don't use the messages folder.
