Is there a way to hide a contact on the Tour like you can on a Treo?

No but you can put it in a memo or password keeper.

    Thanks.
I mostly IM this person and don't particularly want their name showing on that list.

You could save it as another person's name.

Can't you create contact groups, then filter which groups are visible? I haven't tried that, but think I read it somewhere.

Not to steal the thread but I have a lot of nosy people I work with that like to look over my shoulder. I change out names to initials on the contacts.

Haha, and when someone looks at your phone's messages, "woah? you text Verizon Customer Service about locations to meet?" haha.

I used the "Change the name" trick and it works well. I keep it something short like "Sears" or "Walmart". Nobody gives the name Walmart a second glance.
