it seems when I open a text message it has the date and time followed by
call back number, and then all the way to the right going down the right side of the page in broken text it has the name of the sender which you then have to scroll down and after a seperator line it has the message. Is there a way to change the format to make it simple??

you'll see it when you go to options, sms text, and open up all the parameters you can set. its the first one. what it does, I'm guessing is gives you options on how your received texts come to you and how they look. mine is set to off and don't have what the op was saying they didn't like.
Just a guess, but I am thinking you made your font larger as well ?
If you reduce the size in screen/keyboard settings, everything will fall back into place
