Not all of them, but any app that is providing up-to-date information (weather, news, sports, traffic, maps, etc.) or allows you to stream music, video, etc. accesses the internet and therefore uses data. Most of these will use wifi when it is available, and some, but not all, you can set to only use wifi if network data is a concern.
