Hi. I recently ended my 2-year contract, and decided to convert my BlackBerry Torch 9800 into a Media Player. I want to delete some of the system applications such as Phone and Messages. Can anyone tell me how I could do this?

Wow, it's been a while... I would start by installing bbh-tools and using the shrink-a-os feature to remove the necessary applications. Possibly even going into the os folder itself and deleting the .cod files myself. Give it a shot, see what happens

It's hard to remember back to the old OS -
I think you might be able to do it with BBSAK BlackBerry Swiss Army knife or the Shrink-a-OS tool...

First delete standalone applications like Facebook, LinkedIn, etc. Go to Options->Device->Application Management, right-click on e.g. Facebook, and choose Delete. Do this for every other app that has a Delete option.

To delete the native apps, go to Options->Device->Application Management, and click on e.g. Contacts. It will open the app properties stating what modules are a part of the application. Write the module names down, and do the same for the other PIM applications. Then use BBSAK to delete those COD files from the phone.
