Go to docs.blackberry.com and pick the Torch and then user guide. You will find a section on shortcuts and all the new features of the Torch.

If you go to blackberry key-options from the home screen, change launch by typing to "application shortcuts". You can use the physical keyboard shortcut. I.E. "B" for browser, "N" for bbm, "C" for compose, etc. Hope that helps!
