I already have the OS 5.0.0.713 from "TBayTel" installed couple days ago. Everything is working well for me, the way I want it. Do I really need the official release from Verizon? Am I missing anything?

No they are the same.
I had the TBay Tel loaded on my phone and when the VZW update came out, I just wiped and loaded....I have a VZW phone so im putting the VZW update on it. But if its the same then o well..

VZW never disables tethering to my knowledge. I use it all the time using their own software, VZAccess Manager. Not sure why you thought that?
Does this need a separate data plan or does it use the device data plan?
It uses a separate data plan ($30/month) which is prorated for the days you use it.
Tethering works just fine on the VZ build. I just used it yesterday with VZ Access Manager.
I also had the TBayTel build installed before reinstalling the VZ version. No difference whatsoever for me.
They are the exact same build. No differences.

let me clarify: vzw disables tethering through desktop manager, or at least they did in the last vzw build i used. :p
