I'm posting this on behalf of my girlfriend because neither of us are able to find out what happened.

The phone was reset, and her email accounts disappeared from the Home Screen, however in Email set up, all three are still there and appearing as registered, they just aren't appearing on the home screen or in any of the folders.

Any way to get them back?

I think the first thing you should try is to resend all of the service books to her phone.

Go to this site and you can easily resend all of the service books and edit your signature, etc.
