LOVE Opera as a browser option (yes, it's blazing fast), but in portrait mode, I can't get Multi-tap to work. I actually get the Multi-tap keyboard, but when I start tapping (e.g. for "b", I tap on the '2 ABC' spot twice), it responds back with an "s" - which happens to be the 2nd letter paired with "a" on sure-type. Can I not use multi-tap with Opera text entry fields???

Seems like something is screwy with your installation. Remove Opera Mini, do a battery pull/restart, then re-install and see if the problem persists.
Also try enabling Suretype and then re-enabling Multi-tap
