You should install some of the apps you had on the previous phone and see if they work any better.

Poorly written apps cause many of the issues seen with the phone. There's no real way to tell except to run the app and see what happens. There are also bugs in the OS that can cause problems. Each new revision of the OS helps with some of the problems. Don't obsess over it. It's getting better.
No, you will be able if it will freeze, when it freezes. Consistent low memory might be a warning, low as in under 5.

It's so difficult to determine the cause of the freeze just chatting in these forums. It could be you had a hardware problem not present on your newer device. You may also have an app that will freeze no matter what device it's installed to.
8 freezes a week could be excessive if you barely use the phone. Or it might be acceptable if you're an extreme user. Only you can answer that question.
Realistically, the phone should never freeze. Reliability is very important. Phones that freeze up don't shout reliable.
