    When I have the word substitution feature enabled, my phone will vibrate every time a correction is made. Example: each time 'i' is auto-capitalised to 'I' my phone will vibrate. Or each time 'dont' is corrected to 'don't' it will vibrate. Etc.

    This is quite annoying. Is there a way to make it stop vibrating as it corrects text? I would like to type without the phone shaking all day long.

    Yes, there is a way.

    Go to settings-language and input-feedback and make sure to turn vibrate on correction setting to off.
