I'm using an AT&T Priv on the T-Mobile network. Works great, but I it won't update to the new build. Any suggestions? I've tried by taking out the sim card. Didn't work. If I do a factory reset, will it allow the update?

Probably. Or you could just go grab an AT&T SIM card and pop it in. Doesn't even need to be active. Will likely still trigger it.

T Mobile doesn't carry the Priv, therefore, if you are using an 'unlocked' AT&T Priv, you ain't gonna get the updates, ever. Unless T Mobile starts carrying the Priv, even then you will have register your IMI # with them. Borrow somebody's AT&T SIM, but remember it's a micro SIM.
And next time buy from Blackberry if you want a really unlocked phone. ( Or Amazon, B&H anywhere except a carrier)
If I buy an unlocked phone from Blackberry to use on the AT&T network, i.e. get their nano sim card and use on my plan, do the updates come from Blackberry or am I stuck with the slow - often delayed updates from AT&T? (Using a Z10 now and looking at buying the Priv)
You will get the direct updates from BlackBerry.
I have an unlocked Priv and am using it on Straight Talk Blue (AT&T); it got the update as soon as BlackBerry released it.
Factory reset didn't do a thing for me - no update! (I have an AT&T Priv on Cricket - which is run by AT&T, but I still haven't received any updates). If you've already got your phone set the way you like, you may want to just stick an AT&T SIM in it and see if it updates. I've been looking for anyone I know who has AT&T, and cannot find anyone. Strange!
If you bought the phone from AT&T it's locked to AT&T, if you unlock it, only certain things are unlocked, updates are not one of them.
The only way you will get the update, or any future ones is to go back on the AT&T network.
Saying your phone is unlocked, is meaningless. It's either 'Carrier Unlocked', which isn't truly unlocked, or it's 'Factory Unlocked'
A Carrier Unlocked phone will have to be connected to a carrier that sells and supports that phone to get an update.
In the U.S. that means AT&T.
If T-Mo ever starts carrying the Priv you should be able to get your AT&T unlocked phone updated by T-Mo, but to get the update pushed, you would have to register the IMI with T-Mo.
