Yesterday, I switched my Blackberry Priv (STV100-1) over from AT&T to MetroPCS. AT&T supplied the unlock code and everything seemed to transfer over fine.

Since then, the phone has been rebooting itself once every several minutes. It will either do it on its own or freeze and reboot after I try to use it.

I have already tried (all with no luck):
-Hard reset
-Factory reset
-Removing recently installed apps
-Changing the "preferred network type" off of 4G LTE

In between the reboots, I have been able to use the phone normally (calls, text, e-mail, apps) without any problem.

Any help would be greatly appreciated!

When you do hard reset do you have the metropcs Sim card inserted?

Try reloading the OS .. download it from the autoloaders site and flash it.
