How do I change the default home screen

The stock launcher for Android sets the left most screen/panel as the default home screen (because the screen/panel immediately to the left of the default is reserved to bring up Google Now). When you longpress an empty area in one of your home screens to bring up a preview of the screens/panels, you can drag your preferred one to the leftmost position. Most OEMs who customize the launcher with their own flavors, will typically change that functionality by changing Google Now to a gesture, and revamping the structure of the screens/panels.

Myself personally, I never use OEM launchers anyway because I prefer Nova Launcher (because of its extensive customization options). With Nova Launcher, all you need to do is longpress the screen to bring up the previews, and tap the little House/Home icon at the top of whichever panel you prefer to be the default.
