I'm afraid I already know the answer to this, but I'll have a go anyway... :
Where can I find a detailed change log of these updates?
"Change log"? From RIM?!? .
The best change log around is right here on CrackBerry. WE are the change log! When things happen, subscribe to the posting and hang on tight. You'll get some good info and a LOT of haters and whiners, but it comes with the territory.
So has anyone installed the update? I'm still running 2.0.1.358 but I'm getting the 469mb update message to 2.0.1.668.
I downgraded just fine from my 2.1.0.840 -> 2.0.1.668 without any of the issues that used to exist. Particularly the ones that keep being brought up in the last few posts. The .668 I installed on one of my PBs last night works great.

After I copied all my PB files to my new, 32GB Playbook for insurance, I finally downloaded the 359mb version of 2.0.1.668 that has been demanding to be downloaded for the past two months (I guess when they pulled it, they overlooked my tablet).
Everything went smoothly with the install. Browsing seems OK so far as does my Kindle reader. Time will tell whether I have battery issues, wifi disconnect problems or the like. I figured that since I missed the 2.0.1.358 update, transitioning to the soon-expected 2.1 from my 2.0.0.7971 OS might be a long and perilous leap. So I made my move before 2.1 launch. It will be interesting to see if a new version of .668 is pushed to me in the next few days as it has to a number of other folks.
This morning, September 24, 2012, the 1 mg update to OS 2.0.1.668 showed up. It was a quick update. Have no idea what changes occurred, or is this the fix of .668? So far, so good!
