Since the 2.0 update I have noticed that booting up the PB takes about 3 mins? Is this normal?

Yes this is normal. I don't turn off the PB I just put it on standby.

It's completely normal, unless you have it on the charger in which case it's already partially booted and will come up much faster after you press the Power button.

The theory is that the Android player is being partially preloaded, and that's what's taking a chunk of the extra time. (At least, I think that's the theory... it's mine anyway. ;-) )

I always use standby which works well and has very small power drain.
