If you accidently change your text out of T9 format how do you change it back? Any help would be very much appreciated. Thanks!

Its not T9 its sure type. Go to any screen that has you ready to type (ex. new message, web address field, etc.) Then, just hit your menu button (the button with all the dots) scroll down to enable sure type. Then it will stay like that until you go back in there and select enable multi-tap.
