When I open my address book, I can press keys such as the "M" to quickly filter to that portion of the list for last names beginning with "M". However, if I want to jump to the part of the list beginning with "V" (or any other key where there are multiple letters) it is a bit trickier. When I press the #7 key, it filters the list to all items that begin with "C" followed by all items that begin with "V" since those are the two letters on the #7 key.

If I want to quickly filter to ONLY the names beginning with "V", how do I do that? Scrolling through all my "C's" before I can see my "V's" is annoying, since I have a lot of names in my address book.

Ditto for all the other keys with multiple letters. Turning on multi-tap doesn't seem to be an option.

Try holding the key down for a second.

I tried that already. All it does is change the letter to upper-case. It doesn't advance it to the next letter on the key.

Type the first 2 characters in the name you are looking for. With every additional keystroke, the seach narrows.

That won't work with SureType. Use the method Medic411 suggested. There's more discussion on it in these threads:
