If I delete my emails in hub, are going to be deleted in my servers (Hotmail or Outlook) as well?

If you choose 'Delete email from Hub' then it won't delete emails on your servers.

In your HUB settings, (3 pin selection in bottom right corner), select Display & Actions. Inside there is an option to choose whether Delete just works within the hub, or also on the server.

Even with those settings on the Passport, it will archive the message on Gmail's end unless you change server settings.

Edit: realize question wasn't about Gmail
