Does any phone increase in value over time? Not even an iPhone goes up.

Yes, old phone's value do go up. (like really old). For example the First iPhone and also Nokia 1100.
SE's value won't be up, like maybe never. If it does, maybe in 15-20 years.

Just go to Ebay, Craigslist, Amazon etc and take an average price.

They will drop and drop but at one point they become collectors items and the value increases ...but we are only talking mint devices . I have a collection of them.

Jesus, 3500 for the first iphone?? Thats crazy. But anyways, the SE prices on ebay and stuff are all over the place, not really an average price, got an offer for 260 though, sound good? Lol
Passport has a chance to become an collector's item because it's so unique and loved. But limited customer base will hold it back. iPhone customer base is way higher.
I remember last year someone tried selling the #2 / 50 Passport Gold edition and he just couldn't get rid of it. Kept having to drop the price...not sure at what point the phone finally sold but man if even that thing couldn't sell you know the customer base is small.
Some of us can rock a gold plated phone. It's not a big deal. Flashing around a gold plated phone is not normal. There could be consequences.

As I've been after a PP for a while now, and been following auctions and sales mainly in the UK (so it'll be in GBP) I've seen that the OG goes for a bit more than 100 GBP and the SE for a bit less than 150 GBP. There are also some red ones (which are very beautiful by the way) but I don't follow those and can't really say much about it!
Now, last week there have been many new PP auctions (I assume because of the K1), and the prices are dropping which is great for me as I was hoping to spent a bit less than 100 GBP for the OG, but since I'm increasingly more attracted to the SE, around 120-130 GBP for that!
Please note that's just my market research on that mainly on the UK eBay!

That's the starting price no one has actually bid on it and I doubt any will.
