    So this is probably a stupid question but, is there a way to setup my Gmail account on my Passport so that when I delete an email it doesn't still show up in Gmail on my laptop?

    You can tell the HUB to delete both from HUB and server.

    HUB > Overflow > (whatever the first one is, the one with a keyboard and Aa icon) > Pick Notify/Ask (or whatever it translates to lol)

    I have that selected. Works for my work email which is setup as an Exchange account. Is there a way to setup Gmail as exchange or is there something I need to toggle in gmail online?

    You'll need to match the settings settings displayed.

    You need to go onto Gmail desktop, on a computer preferably.
    And find your email settings.
    There's a setting that will allow your Passport to control Gmail server/email. Instead of the other way around.
