I have installed Booundless Theme from Ninja Themes on my 9700. It work fine. But when I chnaged theme back to Zen theme, the Email Settings icon still show up as Boundless theme icon. It refuse to changed back to default Blackberry icon

How can I change it back?

you may have to delete the theme and reboot

Try the reboot first. I've found that things "stick" sometimes when switching from a 3rd party theme.

resending your service books will make it reappear with the proper icon. however i find that after i reboot, it goes away again. i dont know why. on my 8900, it would always remain as the yahoo Y! logo.
