Is there an app that will let you write Chinese on touchscreen devices, and then have what's written be converted to text?

Chinese characters are text surely, if you have managed to enter and see them
or do you mean transliterate say 青岛 to PinYin (Qingdao)
or another/older representation eg Wade-Giles (TsingTao)
Neither, I mean if I write a character, I want the character to be "typed" as if I "typed" it using PinYin. In other words, if I write "青岛" with my fingers, I want "青岛" to be displayed in text format, like what you see how on this post (can be copied, pasted, etc). In other other words, I want what I write to be able to be saved as a text file, not a jpeg.
I know it's not what you are looking for, but this functionality is built into BlackBerry 10, right?

So you mean Handwriting recognition (if doing it in english)
or as it is so well defined in chinese, stroke input
- I would have thought that it might already be supported in addition to PinYin ?

not that I know of, but not a recent BB OS user
you'd have to search for stroke input
(used to have a 8220 til the Z10 and with the lack of BIS to filter my mails and 100 times increase in data useage now 30 MB /day not 10 MB a month it maybe not long till I go back to the 8220 or get something else (!!)
A shame as the Q10 I saw today was really nice, good keyboard- but no BIS/push email and filters, not for me )
