I know a card will let me save more photos and videos to my Keyone but what I really need is more room for all my apps. Does adding a card help with room for more apps?

Yes, it helps, if you format the card as internal storage.

The downside of formatting card as internal storage is that apps don’t run optimally. Some OEMs even block that ability in order to prevent that situation.

You'll probably run into stability issues as well. It's just not a good way to go about it. You're better off transferring any music/videos/photos to the SD card, and setting any apps that download data to save it to your SD card.
