I have english/french and also French shown as keyboard language choice via spacebar long press... sometimes if I type in French a while, it sets itself to French by some mysterious miracle... later, if I use Voice to type for something else, it hears and types French... is that normal?

You can remove the french only option. The english/french keyboard option should detect what language you are typing and auto switch to that.

Not sure how that works for the voice typing though...
