how do you assign LED colors

I cannot find it on anywhere in settings where you assign LED colors to events. For example I usually used red for email and green for SMS

If you use email via hub, then the settings should be within hub settings. Some has their own notification settings via the app itself, some can be configured through hub, while some can be configured through main settings (global settings).
